Dairy free, egg free chocolate chip pancakes

I wanted to make pancakes that actually taste good. I read a bunch of different recipes and many seemed good, but I had to add my own twist. Here you go and I hope you enjoy.

Ingredients:
Makes 12-16 medium pancakes
1 cup of flour of choice
2 tbs of Baking Powder
1 tsp pure vanilla extract
1/4 cup original applesauce
1 cup dairy free milk of choice

2 TBSP oil of choice
optional: dairy free chocolate chips of choice

Pour flour, Baking Powder, pure vanilla extract, original applesauce, milk and oil into a mixing bowl. Mix until all blended well.

Use large spoon or ice cream scooper to pour batter onto non-stick pan.

Pour batter onto non-stick pan, cook for 2-3 minutes on medium temperature. Watch carefully until batter is bubbled, then flip. If you’d like to add dairy free chips, do it before flipping. Once batter is flipped, cook until golden.

Please note: you can add bananas, strawberries or blueberries instead of Organic Fair Trade 42% Cacao Semi-Sweet Baking Chips.

  1. Oopsie… Aarg, *dairy free*, egg free… I wonder can you substitute gluten free flour? Hmmm.

    We should probably switch to non dairy milk. I really like coconut milk better than almond. I read an article that advised to avoid soy everything (except raw soybeans) because its all way over processed. (Probably GMO too mostly?) Soy milk always gave me cottonmouth, so I never jumped on that bandwagon. I am working hard this week on a lower sugar, less caffeine diet. I ate a half a bag of golden Oreos in one sitting last week. I opened the package, put half in a ziplock and gave Michael the package-saying to him “these are yours, I don’t want the guilt of eating more than half of them”. After a few minutes my ziplock was empty and Michael was graciously popping more Oreos into my mouth that evening and the next morning. I probably ate 2/3 the bag and wouldn’t have minded a few more. I decided after that something needed changing. I’m not ok with being ok with eating a whole bag of Oreos at once. šŸ™‚

    Oh sorry, I’m at target, baby’s sleeping, 2.5 hours til Michael gets off work… Our apartment complex is “inspecting” all units today to make sure all fire alarms are working. Michael wanted me out of the apartment all day. I was AOK with that! No complaints from me on that one. The clutter drives me nuts. If you’re ever in the mood to come over and help me, I will accept! (No pressure though).

    Oh yeah, I have some clothes in a pile for goodwill. I’ll look thru them and see if I have anything that may fit you.
