Ingredients: 1 cup of whole grain basmati rice, 1/2 lb organic cubed chicken breast, 1 cup of almond milk, 1 lb of organic broccoli, pepper to taste, 1 cup grated cheddar cheese. Preheat oven at 350*. Cook rice and chicken separately. Once cooked, mix all ingredients, leaving 1/4 cup cheese to sprinkle on top. Place mixture in pan, then sprinkle remainder cheese on top. Bake for 20-30 minutes or until sides are crispy.
