Homemade Yogurt Muffins

Homemade Yogurt Muffins


1 Cup Plain Yogurt (I use Brown Cow)

2 Ripe bananas

2 Eggs

3 Cups rolled oats

1 ½ TSP Baking powder

½ TSP Baking soda

½ Cup dark chocolate chips of choice (optional, but so YUMMY!)

Optional add ins are raisins, yogurt and/or chocolate chips, peanuts, dried fruit, etc.  Add 1 cup total of any added ingredient.

Preheat oven to 400*.  Prep muffin pan by placing muffin liners or putting a small amount of coconut oil in each spot.  Mix or blend all ingredients except chocolate chips.  Once mixed together, add chocolate chips and mix together by hand.  Place a spoonful of mixture into muffin pan(s), filling each about ⅔ full.  Bake for 15-20 minutes or until toothpick is clean when placed and removed.  Set aside and let cool for 10-15 minutes.  Enjoy!

Makes 24 regular or 48 mini muffins

  1. Mine were kind of mushy inside and lacked flavor…I tried without any add-ins. Anyone add spices or salt at least? How can I make them less mushy?

      1. I over baked them actually. And not opposed just wanted to try without. I am not fond of chocolate chips with banana bread.
