Soft Homemade Vegan or Non-Vegan Granola Bars

Soft Homemade Granola Bars


3 cups rolled oats1 cup whole wheat, coconut or  almond flour (your choice)

1 teaspoon baking soda

3 ripened bananas

1/2 cup softened butter or coconut oil (for vegan)

1 teaspoon pure vanilla extract

1/4 cup honey or syrup 

1 TBSP unsweetened cocoa powder

¼ cup peanut, almond or cashew butter (your choice)

Optional add ins are raisins, yogurt and/or vegan/non vegan chocolate chips, peanuts, dried fruit, etc.  Add 1 cup total of any added ingredient.

Preheat oven at 325*. Line 9X13 baking pan with parchment paper.  Mix or blend ingredients except add ins.  Once mixed together, place add ins then pour blend onto lined baking pan.  Wet hands to form blend into rectangular, slightly flattened shape.  Bake 15-20 minutes.  Set aside to cool for 10-15 minutes.  This will allow time to harden and firm up.
