1-1 ½ LB Chicken thighs (I use hormone free, free range)
½ medium-large sliced onion
2 minced garlic cloves
1 cup water (Alkaline recommended)
Layer onions, chicken and garlic into crock pot then add water and cook on low for 4 hours or high for 2 hours. Turn off once cooked completely. Remove chicken and shred and save broth for rice or beans(optional)
Red Chili Sauce
5-6 Chili pods, remove seeds for more mild and keep seeds for more spicy
Place chili pods in saucepan with water. Bring water to boil and cook pods until softened. Strain cooked pods and place into blender.
2 medium onions, skinned and sides cut off
3 minced garlic cloves
30 ounce can of hominy
3 TBSP oregano
Salt and pepper to taste
1 bunch of minced cilantro and green onions to garnish, 4 sliced lemons to squeeze into soup.
Fill large stock pot ½ way to the top with water. Place onions and garlic into stock pot. Bring water to boil and add in hominy and red chile sauce. Crush oregano into mixture. Cook for 15 minutes and add in cooked chicken. Taste liquid to make sure broth has good flavor. Add salt and pepper as needed. Mix together and you’re done.
Garnish with cilantro, green onions and lemon juice.
