Sausage, potatoes and bell peppers– 1 LB sausage of choice, 4 cubed red, russet or sweet potatoes, ½ bell pepper of 3 different colors of choice, ½ diced onion, 1 minced garlic clove, 1-2 coconut or avocado oil
Saute sausage until cooked and set aside. Cook potatoes with diced onion and minced garlic over medium heat until soft and crispy. Add oil if potatoes start getting stuck to pan. Once potatoes are cooked, add in cooked sausage and bell peppers. Cook for 10-15 minutes or until heated.
