Clean Chocolate Muffins

Clean Chocolate Muffins

Wet Ingredients:

2 TBSP melted butter

2 eggs

2-3 ripened, bananas (frozen and thawed work too)

½ cup plain yogurt (I use Full Fat Brown Cow)

½ cup raw honey

Dry Ingredients:

1 ¾ cup whole wheat flour (almond or coconut flour works too)

⅓ cup cacao powder

2 TSP baking powder

1 TSP baking soda

¼ TSP salt (I use Pink Himalayan Salt)

Other Ingredients:

½ cup chocolate chips (optional, I buy mine from the bulk bins at my local market)

2 TBSP coconut to spread through muffin pan to keep mixture from sticking

Preheat oven to 350*.  Mix wet ingredients together in blend and put aside.  Mix dry ingredients in separate mixing bowl and blend wet mixture into dry mixture.  Oil muffin pan(s) or add cupcake liners and pour a spoonful of mixture into muffin pan(s).  Bake for 20-25 minutes or until the center is clean when poked with a toothpick.

Makes 48 mini muffins or 24 regular sized muffins.
