Lentil and Pinto Bean Tacos

Pinto Beans:

1 soaked pinto beans

1 diced onion

Cook Pinto beans in slow cooker for 8 hours on low or 5-6 hours on high, pressure cooker for 45 minutes on high or stove top for 2-3 hours and set aside once cooked entirely.

Lentils:

1 cup of lentils

3 cups of water

Bring water to a boil and simmer lentils on stove top in pot for 30-45 minutes. Remove from heat once cooked.

Lentil and Bean Taco Mix:

1 minced cilantro bunch

2 minced garlic clove

2 diced green onion

2 diced tomatoes

Mix pinto beans and lentil with above ingredients and serve over corn tortilla or romaine lettuce.

Garnish with:

Sliced cabbage

Avocado

Shredded Cheese

Salsa (optional)
