Banana bread muffins


  • 3 cups flour of choice
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 stick butter [1/2 cup]
  • 1/4 cup cane sugar
  • 2 eggs
  • 5 ripe bananas
  • Non stick oil spray


  1. Preheat over to 350. Spray muffin pan with non stick oil spray.
  2. In a mixing bowl combine dry ingredients (flour, baking soda and salt).
  3. In a separate bowl mix together the wet ingredients (butter, sugar, eggs and banana).
  4. Blend banana mixture to flour mixture and stir until combined.
  5. Fill muffin pan with 1/4 C batter.
  6. Bake for 20 minutes.
